Around 2014, a breeder called Mario Guzman, better known as Mr Sherbinski, and his mates at Cookie Fam Genetics in California's Bay Area crossed Sunset Sherbet with Thin Mint Girl Scout Cookies and came up with Gelato.

They tested about a hundred plants and only kept 25 that made the cut. That one cross kicked off a whole new wave of sweet, creamy, fruity strains that people now call dessert cannabis.

The story behind Gelato and why it took off

Sherbinski flipped Sunset Sherbet to make pollen, then crossed it with Thin Mint Girl Scout Cookies. Because Sunset Sherbet itself came from Girl Scout Cookies and Pink Panties, Gelato ended up with a double dose of Cookie genes. It hit the scene in 2014 and blew up fast.

Six numbered versions got the official nod: Gelato 25 (Barry Bonds), 33 (Larry Bird), 41 (Bacio Gelato), 43 (Gello Gelato), 47 (Mochi Gelato), and 49 (Açaí Berry Gelato). Gelato 33 became the go-to parent for loads of new crosses, including big names like Ice Cream Cake, Runtz, and Biscotti.

The hype got so big that plenty of people started slapping the Gelato name on anything vaguely similar, so there's a lot of unofficial stuff floating around.

These days you'll see more Gelato crosses on dispensary shelves than the original itself, but that original spark is still what everyone's chasing.

What Gelato smells and tastes like

Gelato's known for sweet, citrusy, creamy smells with hints of mint, pine, and vanilla blueberry all mixed in. The main scent molecules are beta-caryophyllene, linalool, beta-myrcene, terpinolene, and limonene, with myrcene usually leading the pack.

Gelato 25 leans floral with strawberry and mango notes, while Gelato 41 brings lavender, vanilla, and pine to the front. Gelato 42 has one of the broadest scent profiles in the family.

The buds themselves are usually deep purple with bright green patches, fiery orange hairs, and a thick coat of sparkly resin.

When it comes to flavour, there’s sweet cookie vibes mixed with fruit, Biscotti tastes earthy and nutty with a smoky finish, and Bubblegum Gelato is like licking cake frosting straight from the bowl.

Gelato crosses worth knowing about

Gelato's been paired with all sorts of other strains to make some proper legends. Gelonade, from Connected Cannabis, mixes Lemon Tree with Gelato 41 and won best sativa flower at the 2018 High Times Cannabis Cup, it's citrus-forward and bright.

Biscotti, also from Connected and named by Berner, has that semisweet, earthy thing going on with smells that remind people of airline biscuits and cheap aftershave.

Jet Fuel Gelato by Compound Genetics crosses Gelato 45 with High Octane and Jet Fuel, bringing fruity herbal smells with a diesel kick.

Dolato (sometimes called Dosilato) from Archive Genetics is a purple Gelato formula with skunky, doughy creaminess and little lavender flecks.

Grandi Guava by Grandiflora Genetics and Cookies is a double Gelato cross that includes Guava Gelato phenotype 25.

Lemon Cherry Gelato blends Sunset Sherbet and Girl Scout Cookies for lemony berry flavours, and Gelato Runtz pairs Gelato 33 with Runtz for sweet, fruity tastes with vanilla, berries, and coffee in the background.

There are also autoflowering versions like Glue Gelato Auto, Gorilla Infested Gelato Auto, Gelato Cookie D'Oh-Ope Auto, and Blue Gelato 41 Auto, which use Siberian Ruderalis to give the plants their auto trait.
